872 Carrot-Raisin Spread

Holy butter Batman!  I wanted a sandwich for lunch today to go with some leftover veggies from last night so I made 872, Carrot Raisin Spread consisting of a grated carrot, raisins, butter and salt.


I’m not exactly sure why, but the butter was freakishly yellow (it was organic so it wasn’t artificially colored).  I’ve never considered butter to be a sandwich filling but it was tasty (as butter is wont to be).  The carrot and raisin made a sweet, but not too sweet, contrast to the slight salt of the butter.  I halved the recipe, but it still required 1/4 c. of butter between three sandwiches so each contained 1 and 1/3 tablespoon of butter!

Another winner from Meta.  Good thing too, since I’ve got two leftover sandwiches (and a butter high).

  1. You can’t really go wrong with copious amounts of butter. If you’re not worried about your cholesterol levels, the full recipe calls for 2 medium carrots, grated, 1/2 cup butter, softened, 1/4 cup raisins, chopped and 1/8th tsp salt blended and is suppose to make 6-8 sandwiches. 🙂
