It’s been awhile since I’ve made a Meta-meal day.  I’m pregnant (hooray!), but also really nauseous and fatigued.  I’m just now getting to the point where I have interest in food (and can make myself eat veggies again!)  Meta to the rescue.

5.28.13 Breakfast

Breakfast was pretty good.  I’m not the biggest fan of prepared cereal (too soggy, too sweet and not particularly satisfying in my opinion), but I love grapefruit juice and it was quick and easy.  I did rather enjoyed the fact that Cinnamon Toast required a recipe (three parts sugar to 1 part cinnamon, just in case you were wondering).

Lunch, featuring 801, Stuffed Tomato Salad No. 1, was pleasantly tasty.  Perhaps even more so since I was attempting to halve the recipe and forgot to halve the amount of cheese.  53, Popovers, were super tasty right out the oven.  Mmmm…buttery and eggy!  926a was not listed!  (926 was; I’ve always wondered about the lettered recipes; if this was a pre-computer fix to avoid renumbering or what).  Anyways, I went 928 Cocoa Syrup and it was a little weird in cold milk.  I ended up microwaving it and drank it hot, but it still wasn’t my favorite.

4.28.13 Lunch

I made several changes for dinner since lamb riblets sounded pretty gross.  I also Parsley Buttered Potatoes 1069 for Quick Escalloped Potatoes 1075 since I’ve already made 1075.  I also left out the White Cake since it was supposed to be leftover from the prior day and I’m still not sold on two desserts in one meal.

My main dish substitution, Meatloaf No. 2 491 with Tomato Sauce 916, was really basic and still yummy and husband approved.  The meatloaf only consisted of ground beef, bread crumbs, an egg, milk and salt and pepper, but the tomato sauce really perked it up.  The potatoes probably would have been good if I didn’t severely overcook them.  The veggies were compatible and fresh and spring-y.  (Bread and butter also on the menu, but I accidentally left it out of the picture).  Prune Whip No. 1 302 embodied what I love about Meta’s recipes.  It only had four simple ingredients, but was very tasty and different.

302 Prune Whip No. 1

3 egg whites

pinch salt

1/4 cup sugar

3/4 cup stiff prune puree (285)

1/2 tsp grated lemon or orange rind, if desired

Meta suggests that instead of using egg whites, you can use 1 cup heavy cream, whipped, which is what I chose (and I’m sure it’s part of what made it so delicious!).  Beat egg whites until stiff (or whip cream).  Add salt and gradually beat in sugar until stiff and smooth.  Fold in prune puree and grated rind.  Serve chilled. 5 servings.

285 Dried Fruit Puree

1 lb any dried fruit

1 1/2 cups water

2/3 sugar, or to suit taste

Wash fruit and put in saucepan along with water.  Soak 3 to 4 hours.  Without changing water, simmer over low heat for 15 to 20 minutes until tender.  Add the sugar during the last 5 minutes of cook and stir until dissolved.  Cool and drain (Meta suggest saving the juice for other uses).  Rub fruit through a sieve.  Juice can be added to think if desired.  Makes about 2 1/2 cups.
