Meta Morning with Scrambled Eggs and Quick Apple Struesel Coffee Cake

This morning I wanted to wake up to something fresh baked.  I’ve been eying 54 Quick Apple Strusel Coffee Cake for awhile.  Because strusel.  Meta really knows her baked goods.  The cake was moist and light and the apples were so yummy!  Of course, the strusel didn’t disappoint either.

To make this cake a part of a complete breakfast, I added 396 Scramble Eggs.  It’s a bit weird to follow a recipe for something I’m made countless times, but Meta does suggest a different method than I usually use (over very low heat, scrambled with a fork).  The results had a nice texture but the ratio of salt was a bit much for my taste.

54 Quick Apple Strusel Coffee Cake

1 1/2 cups all-purpose flour

3 tsp baking powder

1/2 cup sugar

1/2 tsp salt

1/2  cinnamon

1 egg

1/2 cup milk

1/4 cup shortening

1 1/2 cups chopped tart apple

Steusel topping:

1/4 cup sugar

2 TBSP flour

1 TBSP butter

1/2 tsp cinnamon

Preheat oven to 400 degrees.  Butter a 8-inch square baking pan.  Measure flour and combine well with baking powder, sugar, salt and cinnamon.  Melt shortening.  Beat egg and combine with milk and shortening in a separate bowl.  Add liquid mixture to dry and add apples (the 1 1/2 cups worked about to about 1 medium apple for me).  Mix well.  Spread into the baking pan.  Mix struesel ingredients until they form a crumbly mixture.  Sprinkle over the top.  Bake about 30 minutes.
